Spaghetti Squash is a kick ass way to feel sorta kinda like you’re eating spaghetti- but without the “I just want to be glued to my couch and watch Netflix for the rest of the evening” kind of feeling. And it’s really delicious and suuuuuper easy to make. It also contains a ton of nutrients including vitamin A, B-6, thiamin, riboflavin, niacin, folate, pantothenic acid and vitamin K.. just to name a few.
It’s super simple. Here's what you do:
First preheat the oven to 400 degrees. Then start by cutting the spaghetti squash in half and scooping out the seeds in the middle with a spoon.
Then cut it in half and season it with coconut oil, salt, pepper, fresh garlic, parsley and oregano.
Put it in the oven for about 60-75 mins... depending on the size of the squash. The squash is cooked once it’s tender.
You can then scrape out the squash using a fork to create the spaghetti “noodles”. The stands wrap around the squash horizontally so scrape in this direction to create longer noodles.
Top with a little marinara sauce and voila!
