I love cashew cream because it’s so versatile. It can be made sweet and chocolatey for desserts or made with garlic and peppers to be used in savoury dishes.
This particular chocolatey version is so tasty. As long as you’ve got this stuff in the house you will never miss “regular” sugary, bad-for-you desserts. It can be used as a healthy alternative chocolate sauce/frosting over various desserts or just eaten with fruit. It’s also ridiculously easy to make.
This recipe was inspired by Kori Leigh and you can check out her super cool blog here!
Here’s what you'll need:
1 1/2 cups of pre soaked raw cashews (Just soak them in a bowl of water over night, then drain and rinse them before using)
1 cup unsweetened almond milk
2 tbs organic natural maple syrup (alternatively you can also sweeten with a few drops of liquid stevia)
5 tbs raw cacao powder
a dash of vanilla extract
Basically just throw all those ingredients in the blender and blend it up until its nice and smooth!
I like to use quite a bit of cacao in my recipe to make it almost a bit bitter sweet but if you want yours to be less intense then adjust accordingly. Also, raw cacao gives you a RIDICULOUS energy boost since it’s a super food thats packed with magnesium so it’s perfect to have some of this stuff over some fruit before a workout but be careful about eating too much as a bedtime snack!
