4 large potatoes
1/8 cup olive oil
1/3 cup freshly squeezed lemon juice (2 lemons)
1 tablespoon dried oregano
2 cloves minced garlic
1 tablespoon sea salt
1/4 teaspoon freshly ground black pepper
Preheat oven to 400F.
Chop Potatoes into large cubes.
Toss potatoes in olive oil, oregano, lemon juice, garlic, salt and papper.
Roast for 40-50 minutes (depending on how big the potatoes are) until golden brown.
Garnish with fresh oregano and enjoy!
