Ingredients:

4 large potatoes
1/8 cup olive oil
1/3 cup freshly squeezed lemon juice (2 lemons)
1 tablespoon dried oregano
2 cloves minced garlic
1 tablespoon sea salt
1/4 teaspoon freshly ground black pepper


Directions:

  1. Preheat oven to 400F.

  2. Chop Potatoes into large cubes.

  3. Toss potatoes in olive oil, oregano, lemon juice, garlic, salt and papper.

  4. Roast for 40-50 minutes (depending on how big the potatoes are) until golden brown.

  5. Garnish with fresh oregano and enjoy!
