Coconut Almond Granola

Breakfast is the most important meal of the day but it can be easy to forget to eat breaky when you're rushing to work in the morning. I love keeping some granola in the house for a super quick breakfast when I've got a busy morning or just for convenience when I don't feel like preparing something more elaborate. Plus, when I keep pre-prepared healthy food on hand there is less temptation to eat junk food. Being proactive and having a few quick, healthy options in the cupboard is half the battle.

This granola is super delicious, especially topped with a little fresh fruit, cashew cream or almond milk so this "battle" is actually non existent. You'll just want the granola.

Almond Coconut Granola Collage with cashew cream


Ingredients:

  • 1 ½ cups old fashioned rolled oats
  • ½ cup unsweetened coconut flakes
  • ½ cup coarsely chopped almonds
  • ¼ cup hemp seed hearts
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup chia seeds
  • ¼ cup melted coconut oil
  • ½ cup honey

Directions:

  1. Preheat the oven to 350 F.

  2. Mix up all the ingredients in a large bowl.

  3. Grease 2 baking sheets with coconut oil and spread the granola mixture into a thin layer on the sheets.

  4. Bake for 15 mins, briefly removing the granola halfway through to stir it.

  5. Remove the sheets from the oven. Stir the granola about every minute or so as it cools. It hardens as it cools so this helps the granola not to harden into one big clump.

  6. Serve with fresh fruit and vegan cashew cream!
